Description

Marry Me Mushrooms is a creamy, flavorful skillet dish featuring tender button mushrooms in a rich sauce made with sun-dried tomatoes, garlic, Italian seasoning, and Parmesan cheese. This quick and easy recipe comes together in just 20 minutes, making it perfect for a comforting weeknight meal that can be served over mashed potatoes, pasta, or rice.

Ingredients

Mushrooms and Butter

  • 16 ounces button mushrooms, halved and whole
  • 4 tablespoons unsalted butter, divided

Sauce

  • 2 tablespoons all-purpose flour
  • 2 teaspoons minced garlic
  • ¾ cup sun-dried tomatoes, drained
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon paprika
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese

Finishing Touches

  • ⅓ cup chopped fresh basil, plus more for garnish
  • ½ teaspoon red pepper flakes (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cook Mushrooms: Melt 2 tablespoons of unsalted butter in a large skillet over medium-high heat. Add the halved and whole button mushrooms to the skillet. Cook them for 3 to 4 minutes until they are tender and develop a slight brown sear.
  2. Make Roux: Add the remaining 2 tablespoons of butter and the all-purpose flour to the skillet. Stir continuously to create a paste, which will serve as the base for the sauce.
  3. Add Flavorings: Stir in the minced garlic, drained sun-dried tomatoes, dried Italian seasoning, and paprika. Mix well so the flavors meld together.
  4. Prepare Sauce: Slowly whisk in the chicken broth, heavy cream, and grated Parmesan cheese. Continue heating the mixture until the sauce begins to thicken and coats the back of a spoon.
  5. Finish the Dish: Stir in chopped fresh basil and sprinkle in red pepper flakes if using. Adjust the seasoning with salt and pepper according to your taste preferences.
  6. Serve: Garnish with additional chopped basil and red pepper flakes if desired. Serve the creamy mushrooms hot over mashed potatoes, pasta, or rice for a satisfying meal.

Notes

  • You can substitute chicken broth with vegetable broth to make this dish vegetarian-friendly.
  • For a dairy-free version, use non-dairy cream and vegan butter alternatives and omit the Parmesan or use a vegan cheese substitute.
  • If you prefer less heat, reduce or omit the red pepper flakes from the garnish.
  • Ensure mushrooms are dry before cooking to get a nice brown sear rather than steaming them.
  • This sauce pairs beautifully with grilled chicken or steak if you’re looking to add protein.
