Ingredients
Mushrooms and Butter
- 16 ounces button mushrooms, halved and whole
- 4 tablespoons unsalted butter, divided
Sauce
- 2 tablespoons all-purpose flour
- 2 teaspoons minced garlic
- ¾ cup sun-dried tomatoes, drained
- 1 teaspoon dried Italian seasoning
- 1 teaspoon paprika
- 1 ½ cups chicken broth
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
Finishing Touches
- ⅓ cup chopped fresh basil, plus more for garnish
- ½ teaspoon red pepper flakes (for garnish)
- Salt and pepper to taste
Instructions
- Cook Mushrooms: Melt 2 tablespoons of unsalted butter in a large skillet over medium-high heat. Add the halved and whole button mushrooms to the skillet. Cook them for 3 to 4 minutes until they are tender and develop a slight brown sear.
- Make Roux: Add the remaining 2 tablespoons of butter and the all-purpose flour to the skillet. Stir continuously to create a paste, which will serve as the base for the sauce.
- Add Flavorings: Stir in the minced garlic, drained sun-dried tomatoes, dried Italian seasoning, and paprika. Mix well so the flavors meld together.
- Prepare Sauce: Slowly whisk in the chicken broth, heavy cream, and grated Parmesan cheese. Continue heating the mixture until the sauce begins to thicken and coats the back of a spoon.
- Finish the Dish: Stir in chopped fresh basil and sprinkle in red pepper flakes if using. Adjust the seasoning with salt and pepper according to your taste preferences.
- Serve: Garnish with additional chopped basil and red pepper flakes if desired. Serve the creamy mushrooms hot over mashed potatoes, pasta, or rice for a satisfying meal.
Notes
- You can substitute chicken broth with vegetable broth to make this dish vegetarian-friendly.
- For a dairy-free version, use non-dairy cream and vegan butter alternatives and omit the Parmesan or use a vegan cheese substitute.
- If you prefer less heat, reduce or omit the red pepper flakes from the garnish.
- Ensure mushrooms are dry before cooking to get a nice brown sear rather than steaming them.
- This sauce pairs beautifully with grilled chicken or steak if you’re looking to add protein.
