Ingredients

Meatloaf Mixture

  • 1 ½-2 lb lean ground beef
  • ¾ cup breadcrumbs
  • ½ cup ketchup
  • 3 tablespoons milk
  • 2 large eggs

  • 2 teaspoons minced dried onion

Topping

  • ¾ cup ketchup (divided as ½ cup in mixture and 1 tablespoon per muffin before final bake)
  • 1 cup prepared mashed potatoes (warmed)


Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) and spray a 12-cup muffin tin thoroughly with cooking spray to prevent sticking.
  2. Mix ingredients: In a large mixing bowl, combine the lean ground beef, breadcrumbs, ½ cup ketchup, milk, eggs, Worcestershire sauce, and dried minced onion. Mix until all ingredients are evenly incorporated but avoid overmixing to keep meatloaf tender.
  3. Portion meatloaf: Divide the meat mixture evenly among the 12 muffin cups, pressing down slightly to form compact mini meatloaves.
