Description
Deliciously festive Mince Pie Flapjacks combining the warm spices of cinnamon and mixed spice with the rich, fruity mincemeat layered between sweet, buttery oat flapjacks. Perfect for holiday treats or cozy tea times, these flapjacks are soft, golden, and bursting with seasonal flavors.

Dry Ingredients
- 500 g Porridge oats
- 1/2 tsp Cinnamon
- 1/2 tsp Mixed spice
- Pinch of Salt
Wet Ingredients
- 200 g Butter (unsalted)
- 175 g Light brown soft sugar
- 100 g Golden syrup
Additional Ingredients
- 350 g Mincemeat
- 50 g Icing sugar
- 2 tsp Water
Instructions
- Preheat and prepare tin: Pre-heat your oven to 160°C Fan/350°F/Gas Mark 4 and line an 8″ square tin with baking paper. Grease the tin lightly with butter to help the paper stick.
- Mix dry ingredients: In a large mixing bowl, combine the porridge oats, cinnamon, mixed spice, and a pinch of salt. Stir well to distribute the spices evenly.
- Melt butter and sugars: Place the butter, golden syrup, and light brown soft sugar in a medium saucepan over low heat. Stir continuously until the sugar dissolves completely and the mixture is fully melted.
- Combine wet and dry: Pour the melted butter and sugar mixture into the bowl with the oats and stir thoroughly until all oats are fully coated and evenly mixed.
- Assemble layers: Spoon half of the oat mixture into the lined tin, pressing it down smoothly with the back of a spoon or silicone spatula to form an even base layer. Spread the mincemeat evenly over this oat base. Then, spoon the remaining oat mixture on top of the mincemeat and smooth out to an even layer.
- Bake flapjacks: Place the tin in the oven and bake for 20–25 minutes until the flapjacks are golden brown all over. The flapjacks may look slightly unset when removed but will firm as they cool.
- Cool and slice: Allow the flapjacks to cool completely in the tin. Once cool, carefully remove and cut into squares using a sharp knife.
- Store: Place the flapjacks in an airtight container and store in a cool place. Consume leftovers within one week for the best taste and freshness.
