Description

These Mini Pink Cheesecakes are adorable, no-bake treats featuring a crunchy graham cracker crust and a creamy, sweet pink-tinted filling studded with crushed Valentines M&M’s. Perfect for parties or a fun dessert, these cheesecakes set quickly in the freezer and require no baking, making them easy and delightful to prepare.

Ingredients

Crust

  • 1 cup crushed graham crackers
  • 5 Tbsp unsalted butter, melted

Filling

  • 1 ½ cups heavy cream
  • 1 tsp vanilla extract
  • 1 8 oz block cream cheese, room temperature
  • 1 cup powdered sugar
  • 1 cup crushed Valentines M&M’s

Instructions

  1. Prepare the crust: In a small bowl, combine the crushed graham crackers and melted unsalted butter until the mixture resembles wet sand. Line a muffin tin with cupcake liners and spoon the graham cracker mixture into each liner. Use a small glass or the back of a spoon to firmly press down on the mixture, forming a compact crust at the base of each liner.
  2. Whip the cream: Using an electric hand mixer or stand mixer, whip the heavy cream along with the vanilla extract until soft peaks form, ensuring it has a smooth, airy texture.
  3. Incorporate cream cheese: Add the room-temperature cream cheese to the whipped cream and continue whipping until the mixture is fully combined and smooth, with no lumps remaining.
  4. Add sweetness and mix-ins: Gradually add the powdered sugar and the crushed Valentines M&M’s into the cream cheese mixture. Whisk gently until the M&M pieces are evenly distributed throughout the creamy filling.
  5. Assemble the cheesecakes: Spoon the cream cheese mixture over the graham cracker crusts in the cupcake liners, filling each almost to the top. Garnish with additional crushed M&M’s on top for decoration.
  6. Set the cheesecakes: Place the assembled mini cheesecakes in the freezer and allow them to set for at least 2 hours until firm and ready to serve.

Notes

  • Ensure the cream cheese is at room temperature to avoid lumps in the filling.
  • Use cupcake liners to make removal easier and for a neat presentation.
  • For a firmer crust, press down the graham cracker mixture firmly.
  • These cheesecakes should be served chilled or frozen and can be stored in the freezer for up to 3 days.
  • Feel free to substitute the Valentines M&M’s with any other colored or themed candy to suit different occasions.
