Ingredients

Pastry

  • 2 sheets frozen puff pastry (thawed)

Filling

  • 1 pound strawberries (chopped)
  • 1 1/2 tablespoons sugar
  • 2 teaspoons cornstarch
  • pinch of salt

Egg Wash

  • 1 egg
  • 1 teaspoon water

Glaze & Topping

  • 3/4 cup powdered sugar
  • 1/4 cup roasted salted pistachios (chopped)


Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper to prepare for baking the turnovers.
  2. Prepare Strawberry Filling: In a bowl, toss the chopped strawberries with sugar, cornstarch, and a pinch of salt. Let the mixture sit for 15 to 20 minutes to allow the strawberries to release their juices, which will help thicken the filling.
  3. Shape Turnovers: Slice each puff pastry sheet into 9 squares forming a total of 18 squares. Using a slotted spoon, transfer about a tablespoon of the strawberry mixture onto each square, avoiding excess juice. Fold each square into a triangle by bringing one corner to the opposite corner, then seal the edges firmly with a fork.
