Ingredients

Salmon and Marinade

  • 4 (6 oz each) skinless salmon fillets (about 3/4-inch thick)
  • 3 Tbsp white miso paste (Trader Joe’s recommended)
  • 1 Tbsp soy sauce (or tamari)
  • 1 1/2 Tbsp honey
  • 1 Tbsp avocado oil (or peanut oil)
  • 1 Tbsp fresh lime juice
  • 1 tsp lime zest
  • 1 tsp finely grated ginger
  • 1 tsp finely minced garlic
  • 1/2 tsp toasted sesame oil

Garnish (Optional)

  • 2 Tbsp sliced green onions


Instructions

  1. Prepare Salmon: Place the salmon fillets into a resealable gallon-size plastic bag to prepare for marinating.
  2. Make Marinade: In a small mixing bowl, whisk together white miso paste, soy sauce, honey, avocado oil, fresh lime juice, lime zest, grated ginger, minced garlic, and toasted sesame oil until smooth and combined.
  3. Marinate Salmon: Set aside 1 1/2 tablespoons of the marinade mixture in the fridge for later use. Pour the remaining marinade over the salmon in the bag, ensuring the fillets are evenly coated on all sides. Seal the bag, pressing out excess air, and refrigerate to marinate for 30 to 60 minutes. Do not marinate longer to avoid texture changes.
  4. Preheat Broiler: Position an oven rack about 7 inches from the broiler element. Preheat the broiler on high for 3 minutes to get it sufficiently hot.
  5. Prepare for Broiling: Lightly spray a medium baking sheet with non-stick cooking spray. Remove the reserved marinade from the fridge to warm slightly to room temperature. Take the salmon out of the bag, letting any excess marinade drip off, and place the fillets on the baking sheet. Discard remaining marinade from bag to prevent burning during broiling.
  6. Broil Salmon: Broil the salmon for approximately 5 to 6 minutes until the center is cooked to your liking. Watch closely and tent the fillets with foil if they begin to brown too quickly, to avoid overcooking or burning.
  7. Brush and Serve: Remove the salmon from the oven and brush the reserved 1 1/2 tablespoons of marinade evenly over the fillets for an extra burst of flavor. Garnish with sliced green onions if desired and serve immediately.

Notes

  • Do not marinate the salmon for longer than 60 minutes, as the texture can become mushy from the miso.
  • Tenting with foil during broiling helps prevent the fish from drying out or over-browning.
  • If you don’t consume soy, tamari is a great gluten-free alternative.
  • Adjust broiling time based on thickness and your oven’s power to avoid under- or overcooking.
