Ingredients

Berry Mixture

  • 2 1/2 cups blueberries
  • 2 1/2 cups raspberries
  • 1 1/2 cups blackberries
  • 1 1/2 cups sliced strawberries
  • 1/2 cup granulated sugar
  • 2 1/2 tablespoons cornstarch
  • Zest of half a lemon
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon vanilla extract

Biscuit Topping

  • 1 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons packed light brown sugar
  • Zest of half a lemon
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 6 tablespoons cold unsalted butter
  • 1/3 cup cold buttermilk + 1 tablespoon cold buttermilk (divided)
  • 1 tablespoon decorators sugar (optional)


Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C) and lightly spray a 9×13 inch baking dish with cooking spray to prevent sticking.
  2. Make the Berry Filling: In a large bowl, combine the blueberries, raspberries, blackberries, sliced strawberries, granulated sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Gently stir to mix the berries evenly while being careful not to crush them.
  3. Transfer Berries to Baking Dish: Spread the berry mixture evenly into the prepared baking dish, creating the base of your cobbler.
  4. Combine Dry Ingredients for Topping: In another large bowl, stir together the flour, granulated sugar, light brown sugar, lemon zest, baking powder, baking soda, and fine sea salt. Break up any clumps in the brown sugar using a fork.
  5. Add Butter to Flour Mixture: Dice or grate the cold unsalted butter into the dry ingredients, then use a pastry cutter or fork to cut the butter into the mixture until the pieces are pea-sized.
  6. Add Buttermilk and Form Dough: Pour in 1/3 cup of the cold buttermilk and stir until a slightly sticky dough forms.
  7. Shape and Place Topping: Take small handfuls of the dough, flatten each to about 1/4 inch thick, and arrange the pieces across the top of the berry filling, leaving some berries exposed for a beautiful look.
  8. Prepare for Baking: Brush the remaining 1 tablespoon of buttermilk over the biscuit topping and sprinkle with decorators sugar, if using. Some sugar on the exposed berries is fine.
  9. Bake: Bake the cobbler in the preheated oven for 45-50 minutes, until the topping is golden brown and bubbling at the edges.
  10. Check Doneness: Insert a toothpick into the biscuit topping; if it comes out clean, the cobbler is ready.
  11. Cool and Serve: Allow the cobbler to cool for at least 10 minutes before serving to let the filling set slightly for easier slicing.

Notes

  • For best results, use fresh, ripe berries. Frozen berries can be used but may make the filling more watery.
  • Grating cold butter helps to incorporate it more evenly into the flour mixture for a tender topping.
  • Decorators sugar adds a pretty sparkle and slight crunch on top but is optional.
  • Serve warm with vanilla ice cream or whipped cream for an indulgent dessert.
