Ingredients

Cake Batter

  • 2 1/4 cups cake flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 4 large egg whites
  • 1 1/2 cups sugar
  • 2 teaspoons grated lemon zest
  • 8 tablespoons unsalted butter (softened)

Frosting and Decoration

  • White frosting (quantity as needed to frost 24 cupcakes)
  • Red and pink paste/gel food coloring
  • Sprinkles (non-pareils, colored sugar, etc.)


Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a muffin pan with paper cupcake liners to ensure easy removal and clean presentation.
  2. Mix Dry Ingredients: Whisk together cake flour, baking powder, and salt in a medium bowl to combine evenly and aerate the mixture.
  3. Mix Wet Ingredients: In a separate bowl, whisk the egg whites and buttermilk together until combined and slightly frothy.
  4. Cream Sugar and Butter with Lemon Zest: Place the sugar in your mixer bowl and add the lemon zest. Rub the zest into the sugar with your fingers until moist and fragrant. Add the softened butter to this mixture and beat at medium speed for 3 minutes, until the mixture becomes very light in color and fluffy.
  5. Combine Ingredients Gradually: With the mixer on low speed, add one-third of the flour mixture, followed by half of the buttermilk mixture. Then add half of the remaining dry ingredients, the rest of the buttermilk, and finally the remaining dry ingredients. Scrape down the bowl and beat on medium-high speed for 2 minutes to ensure thorough mixing and aeration.
  6. Fill Cupcake Liners: Spoon the batter into the prepared cupcake liners, filling each about two-thirds full to allow room for rising.
  7. Create Heart Shape: Place a round marble between the cupcake liner and the muffin pan at a side to create an indent. This causes the cupcake to bake into a distinctive heart shape.
  8. Bake: Bake in the preheated oven for 20 to 25 minutes or until the cupcakes are very lightly browned and a toothpick inserted into the center comes out clean.
  9. Cool: Allow cupcakes to cool in the pan for 5 minutes. Carefully remove the marbles as they will be hot. Transfer cupcakes to a cooling rack to cool completely before frosting.
  10. Prepare Frosting Colors: Divide the white frosting into three bowls. Keep one bowl white and tint the other two with pink and red gel or paste food coloring.
