Chicken and Stuffing
- 4 chicken breasts (3 if large in size)
- 4 slices (4 1/2 inches each) fresh mozzarella (log or ball)
- 10-12 fresh basil leaves
- 2 Roma tomatoes

- 2 tsp balsamic vinegar
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp Italian seasoning
- Sea salt and pepper to taste

Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken.
- Prepare Tomato Basil Mixture: Slice the Roma tomatoes and chop the fresh basil leaves. In a small to medium bowl, toss the tomatoes and basil along with 2 teaspoons of balsamic vinegar, 2 tablespoons of olive oil, 1 teaspoon Italian seasoning, one minced garlic clove, plus salt and pepper to taste. Set this mixture aside to marinate.
- Season and Stuff Chicken: Season each chicken breast on both sides with sea salt, black pepper, and the remaining minced garlic clove. Using a sharp knife, carefully slice through the middle of each breast lengthwise without cutting all the way through, creating a pocket. Stuff each pocket with half a slice of mozzarella cheese and some of the tomato basil mixture. Secure the ends with toothpicks to keep the filling inside during baking.
- Bake the Chicken: Lightly grease a baking pan and place the stuffed chicken breasts inside. Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.
- Rest and Serve: Remove the chicken from the oven and allow to rest for several minutes to retain its juices. Serve warm, optionally drizzled with balsamic glaze and sprinkled with additional chopped basil for extra flavor and presentation.
