Description

This Mushroom Cheeseburger Casserole combines the hearty flavors of ground beef and mushrooms with creamy goat cheese and melted Swiss cheese, baked to perfection for a comforting, cheesy dish perfect for a family dinner or casual gathering.


Ingredients

Meat and Vegetables

  • 1 pound ground beef
  • 1 pound mushrooms, sliced
  • 5 cloves garlic, thinly sliced

Cheeses

  • 8 slices Swiss cheese, finely chopped
  • 1 cup crumbled goat cheese

Others

  • 1/3 cup thinly sliced scallions
  • 1 teaspoon table salt


Instructions

  1. Prepare: Preheat your oven to 375°F (190°C) and set aside an 8×8 inch baking dish for assembling the casserole.
  2. Cook Beef & Mushrooms: In a high-sided pan over high heat, add the ground beef and 1 teaspoon of table salt. Use a stiff utensil to crumble the beef while cooking until browned and releasing liquid, about a few minutes. Without removing the beef, add the sliced mushrooms and garlic to the same pan. Continue cooking while stirring occasionally until the mushrooms shrink and most of their released liquid evaporates, about 6 to 8 minutes. The only liquid left should be beef grease.
  3. Assemble Casserole: Transfer the beef, mushroom, and garlic mixture to the prepared baking dish. Stir in the crumbled goat cheese and two-thirds of the finely chopped Swiss cheese until well combined and the goat cheese begins to melt, coating the mixture. Sprinkle the sliced scallions evenly over the mixture, then distribute the remaining one-third of Swiss cheese evenly on top. Smooth the surface to make it flat and even.
  4. Bake & Serve: Place the baking dish uncovered in the preheated oven. Bake for about 15 minutes or until the casserole is very hot, bubbling up the sides, and the cheese is fully melted. Remove from the oven and let it cool at room temperature for 5 minutes. Cut into 4 equal portions and serve hot. Store any leftovers in an airtight container.
