Ingredients

Crust

  • 12 graham cracker sheets or 1.5 cups (150 grams) graham cracker crumbs
  • 2 tbsp (25 grams) granulated sugar
  • 1/2 tsp (3 grams) salt, divided
  • 8 tbsp (1 stick) (113 grams) unsalted butter, melted

Pudding Layer

  • 1 (3.9 oz) (110 grams) package instant chocolate pudding mix
  • 1 1/2 cups (360 ml) cold milk (whole or 2%)

Filling

  • 8 oz (1 cup) (226 grams) cream cheese, at room temperature
  • 1 cup (250 grams) whole-milk ricotta cheese
  • 1 tbsp (6 grams) orange zest (optional)
  • 1 tsp (5 ml) vanilla extract
  • 1/4 cup powdered sugar (from 1/2 cup total), divided
  • 1/2 tsp (3 grams) salt, remaining from divided amount

Whipped Cream

  • 1 1/2 cups (360 ml) cold whipping cream
  • 1/4 cup (30 grams) powdered sugar (remaining from 1/2 cup total), divided

Garnish

  • 3/4 cup (135 grams) mini chocolate chips, divided


Instructions

  1. Prepare the Pan: Line an 8×8-inch pan with parchment paper, creating a sling to easily lift out the dessert later.
  2. Make the Pudding: In a bowl, whisk the instant chocolate pudding mix with cold milk until it slightly thickens. Allow it to set while you prepare other components.
  3. Prepare the Crust: Crush the graham crackers into crumbs, then mix them with granulated sugar and half the salt. Stir in the melted butter until the mixture is well combined.
  4. Form and Chill the Crust: Press the crust mixture evenly into the bottom of the prepared pan. Chill in the refrigerator to set while you make the filling.
  5. Whip the Cream: Using a mixer, whip the cold heavy cream with a quarter cup of powdered sugar until stiff peaks form. Set aside.
  6. Mix the Filling: Beat the cream cheese, ricotta cheese, remaining powdered sugar, orange zest (if using), vanilla extract, and the remaining salt in a bowl until the mixture becomes fluffy and smooth.
  7. Combine Cream and Chocolate Chips: Gently fold one cup of the whipped cream and half a cup of mini chocolate chips into the cream cheese mixture.
  8. Layer the Dessert: Spread the ricotta and cream cheese mixture over the chilled crust in an even layer. Next, gently spoon the chocolate pudding layer over the filling. Finally, spread the remaining whipped cream over the pudding layer.
  9. Chill Overnight: Refrigerate the layered dessert for at least 4 hours or preferably overnight to allow it to set and the flavors to meld.
  10. Serve: Before serving, sprinkle the remaining mini chocolate chips on top. Use the parchment sling to lift the dessert from the pan, slice into 12 servings, and enjoy.
