Description

Delicious and easy-to-make no bake chocolate peanut butter oat bars are a perfect snack or dessert. These bars combine creamy peanut butter, rich chocolate, and wholesome oats, all set with natural sweetener and ready in under 30 minutes without any baking required.


Ingredients

Base

  • 1 cup natural peanut butter
  • 1/3 cup pure maple syrup
  • 1/4 teaspoon kosher salt
  • 1 cup oat flour (do not pack)

Chocolate Topping

  • 1 cup chocolate chips
  • 1 teaspoon coconut oil


Instructions

  1. Prepare the pan: Line an 8×8 inch pan with parchment paper, ensuring the paper covers the sides for easy removal of bars.
  2. Make the peanut butter mixture: In a medium bowl, mix the natural peanut butter and pure maple syrup together until smooth and well combined.
  3. Add dry ingredients: Stir in the kosher salt and oat flour into the peanut butter mixture. Mix thoroughly. If needed, use your hands to ensure the mixture is evenly combined and sticky enough to press down.
  4. Press base layer: Transfer the mixture into the lined pan and use your hands or a spatula to press it into an even, compact layer.
  5. Melt chocolate topping: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30 second increments, stirring between each, until the chocolate is fully melted and smooth.
  6. Spread chocolate layer: Pour the melted chocolate mixture over the peanut butter base and use the back of a spoon to spread it evenly over the surface.
  7. Chill to set: Place the pan in the refrigerator or freezer until the chocolate topping hardens completely, about 20-30 minutes.
  8. Cut and serve: Remove from the fridge or freezer, lift the bars out using the parchment paper, cut into 12 equal pieces, and optionally sprinkle with extra sea salt before serving.

  • To make oat flour, simply grind rolled oats in a food processor until fine.
  • For a firmer bar, chill in the freezer instead of the refrigerator.
