- 1 cup old fashioned oats
- ½ cup ground flaxseed
- 1 heavy tablespoon chia seeds
- 1 teaspoon sea salt
- ½ cup M&M’s
Wet Ingredients
- ½ cup creamy peanut butter
- ⅓ cup honey
- 1 teaspoon vanilla extract
Instructions
- Prepare baking sheet: Line a large cookie sheet with parchment paper and set aside. This will be used to hold the energy balls during chilling.
- Mix ingredients: In a large mixing bowl, combine the oats, peanut butter, honey, ground flaxseed, chia seeds, sea salt, and vanilla extract. Mix thoroughly using a rubber spatula or large spoon until well combined.
- Add M&M’s: Fold in the M&M’s gently to distribute them evenly throughout the mixture without crushing them.
- Form balls: Using a 1-½ inch cookie scoop, scoop out the mixture pressing tightly into the scoop. Eject the mixture and roll it between the palms of your hands to form smooth, round balls. Place each ball on the prepared cookie sheet. Repeat until all the mixture is used.
- Chill: Place the cookie sheet in the refrigerator and chill the energy balls for at least 1 hour to set and firm up.
- Serve: Once chilled, the energy balls are ready to eat. Store any leftovers in an airtight container in the refrigerator.
Notes
- Make sure to pack the mixture tightly when scooping to help the balls hold their shape.
