Crust
- 1/2 cup Medjool dates (pits removed)
- 1/2 cup hazelnuts
Whipped Cream
- 1 cup heavy cream
- 1 tbsp vanilla bean paste
Instructions
- Make the cheesecake filling: Add the cottage cheese, Greek yogurt, maple syrup, and vanilla bean paste to a food processor. Blend for 10–15 seconds, just until smooth. Transfer the filling to the fridge to set and chill.
- Prepare the crust: Rinse out the food processor, then add the Medjool dates and hazelnuts. Blend until a sticky dough forms, resembling a natural sweet crust. Set aside.
- Make the whipped cream: Using a stand mixer or hand mixer, whisk the heavy cream and vanilla bean paste for 2–3 minutes until soft peaks form. Transfer the whipped cream to a piping bag or keep it ready with a spoon for easy assembly.
- Assemble the jars: Place a layer of the date and hazelnut crust at the bottom of each serving jar. Spoon or pipe in the chilled cheesecake filling over the crust layer, then top with the vanilla whipped cream.
- Add toppings and chill: Add fresh fruit or any extra toppings you desire. Cover the jars and chill in the fridge for at least 1 hour to allow flavors to meld and the dessert to set properly.
