Description

This refreshing Orange Creamsicle Smoothie combines the natural sweetness of Medjool dates and fresh orange juice with creamy Greek yogurt and light coconut milk, enhanced by subtle vanilla and almond extracts. With the addition of frozen cauliflower for extra nutrition, this smoothie is a perfect healthy treat that tastes just like a classic creamsicle in drink form.

Ingredients

Main Ingredients

  • 3 Medjool dates (¼ cup packed, pitted Medjool dates)
  • ⅔ cup fresh squeezed orange juice
  • ⅓ cup plain or vanilla Greek yogurt (or substitute dairy free yogurt of choice)
  • ⅓ cup light coconut milk (from the can or carton), plus more to thin if necessary
  • 1 cup frozen cauliflower
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon almond extract

Instructions

  1. Soak dates: Soak the pitted Medjool dates in 1 cup of very warm water for at least 5 minutes to soften them, making them easier to blend smoothly.
  2. Prepare ingredients: While the dates are soaking, measure out and arrange all other ingredients—orange juice, yogurt, coconut milk, frozen cauliflower, vanilla extract, and almond extract—for convenience.
  3. Blend smoothie: Add the soaked dates (drained), orange juice, yogurt, coconut milk, frozen cauliflower, vanilla extract, and almond extract into a high-powered blender. Blend until smooth and creamy.
  4. Adjust consistency: If the smoothie is too thick, gradually add additional coconut milk until the desired consistency is achieved.
  5. Serve: Pour the smoothie into glasses and enjoy immediately. This recipe serves 2, but you can also double the ingredients to make more servings.

Notes

  • You can substitute the Medjool dates with 1 fresh or frozen banana for sweetness.
  • To make this smoothie vegan or dairy free, replace the Greek yogurt with a dairy-free yogurt such as coconut yogurt.
  • If you prefer a thinner smoothie, add extra coconut milk to reach your preferred consistency.
