Ingredients
Cookie Dough
- ¾ cup salted butter (at room temperature)
- ½ cup light brown sugar (packed)
- ½ cup granulated sugar
- 1 large egg (at room temperature)
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons cornstarch
- 1 teaspoon baking soda
- 1 cup semi-sweet chocolate chips
- 24 Oreos
Brownie Batter
- 4 oz. semi-sweet chocolate chips (about ⅔ cup)
- ¾ cup salted butter
- 1 ¾ cups granulated sugar
- 3 large eggs (at room temperature)
- 1 teaspoon vanilla extract
- 2 tablespoons unsweetened cocoa powder
- 1 cup all-purpose flour
Instructions
- Preheat the oven: Set your oven to 350°F (180°C), or 160°C if you have a fan oven. Lightly grease a 9×13-inch (approximately 22×33 cm) baking dish, lining it with parchment paper if preferred, and set aside.
- Prepare the cookie dough: In a stand mixer bowl fitted with the paddle attachment, cream together the room-temperature butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Add wet and dry ingredients: Mix in the egg and vanilla until just combined. Gradually add the flour, cornstarch, and baking soda, mixing until a cohesive dough forms.
- Incorporate chocolate chips: Gently fold the semi-sweet chocolate chips into the dough to distribute them evenly.
- Layer the cookie dough: Press the cookie dough into an even layer on the bottom of the prepared baking pan.
- Add Oreo cookies: Arrange the 24 Oreo cookies on top of the cookie dough, gently pressing them into the dough layer to secure them.
- Make the brownie batter: Melt the semi-sweet chocolate chips and salted butter together in a microwave-safe bowl in 30-second intervals, stirring between each until smooth and fully melted.
- Combine sugar and eggs: Stir in the granulated sugar until well incorporated. Add the eggs and vanilla extract, mixing until just combined to avoid overmixing.
- Add dry ingredients: Fold in the unsweetened cocoa powder and the flour, mixing until no dry spots remain, resulting in a smooth batter.
- Top with brownie batter: Pour the brownie batter evenly over the Oreo-covered cookie dough, ensuring all cookies are covered and smooth the surface.
- Bake the brookies: Place the pan in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Cool before serving: Remove from the oven and allow the brookies to cool completely in the pan before slicing to maintain the layers.
- Optional garnish: For an extra touch, drizzle melted chocolate over the cooled brookies and sprinkle crushed Oreo cookies on top before serving.
Notes
- Make sure all eggs and butter are at room temperature for better mixing and texture.
- Do not overmix brownie batter to keep it fudgy and soft.
- Allow the brookies to cool fully before cutting to hold the layers together cleanly.
- You can line the baking dish with parchment paper for easier removal and cleanup.
- Feel free to adjust semi-sweet chocolate chips amounts to your preference.
