Description

Delightfully creamy Oreo Strawberry Ice Cream Bars with a buttery golden Oreo crust, swirled with fresh strawberries and topped with crushed Oreos. Perfect for a refreshing summer treat or anytime dessert, these no-bake bars combine sweetness, crunch, and fruity freshness.

Ingredients

Crust

  • 24 Golden Oreo cookies
  • 6 tablespoons butter, melted

Ice Cream Filling

  • 2 cups heavy cream
  • ½ cup sweetened condensed milk
  • 1 cup chopped fresh strawberries

Toppings

  • 12 Golden Oreo cookies, coarsely crushed
  • ½ cup chopped fresh strawberries

Instructions

  1. Prepare the Crust: Line a 9×9-inch pan with parchment paper and set it aside. Place 24 Golden Oreo cookies into a food processor and crush them into fine crumbs. In a mixing bowl, combine the Oreo crumbs with melted butter, then spread and press the mixture evenly into the bottom of the prepared pan. Place the pan in the freezer while preparing the ice cream filling.
  2. Whip the Cream: Using an electric mixer, whip the heavy cream in a large mixing bowl until stiff peaks form, ensuring a light and airy texture for the ice cream bars.
  3. Make the Ice Cream Mixture: Gently fold the sweetened condensed milk into the whipped cream to sweeten and stabilize the mixture. Stir in 1 cup of chopped fresh strawberries to infuse fruity flavor throughout.
  4. Assemble the Bars: Pour the strawberry ice cream mixture over the prepared Oreo crust and smooth out the surface evenly with a spatula. Sprinkle the coarsely crushed 12 Oreo cookies evenly over the top of the mixture.
  5. Freeze the Bars: Place the pan in the freezer and allow the bars to freeze for at least 8 hours or overnight to solidify fully.
  6. Serve: Before serving, top the bars with the remaining ½ cup of chopped fresh strawberries for added freshness and color. Carefully lift the ice cream out of the pan using the parchment paper, and slice into 8 equal pieces to serve.
  7. Storage: Store any leftover ice cream bars in an airtight container in the freezer for up to 2 weeks to maintain freshness and texture.

Notes

  • Use parchment paper for easy removal and clean slicing.
  • Ensure whipped cream is beaten to stiff peaks for proper texture and stability in the ice cream bars.
  • Freeze for at least 8 hours or overnight for best results.
  • Store leftovers properly in an airtight container to retain flavor and prevent freezer burn.
