Description

These Parmesan Garlic Potato Stacks are a deliciously crispy and cheesy side dish perfect for any meal. Thinly sliced russet or Yukon Gold potatoes are tossed in a flavorful blend of melted butter, Parmesan cheese, garlic powder, salt, and pepper, then layered and baked until golden and tender. Easy to prepare and sure to impress, these stacks are garnished optionally with fresh or dried thyme for an added aromatic touch.

Ingredients

Potatoes

  • 2 ½ lb russet potatoes, very thinly sliced (1.15 kg)

Seasoning Mix

  • ⅓ cup butter (or half butter + half olive oil), melted (75 g / 80 ml)
  • ¾ cup Parmesan cheese, grated (75 g)
  • 1 ½ tsp garlic powder (4 g)
  • ¾ tsp salt (4 g)
  • ¾ tsp ground black pepper (2 g)

Additional

  • Thyme, fresh or dried, for garnish (optional)
  • Oil or non-stick spray for greasing muffin tin

Instructions

  1. Preheat and prepare tin: Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin well with oil or non-stick spray to prevent sticking.
  2. Toss potatoes with seasoning: In a large bowl, combine the very thinly sliced potatoes with the melted butter (or butter and olive oil mixture), grated Parmesan cheese, garlic powder, salt, and black pepper. Mix thoroughly until all slices are evenly coated with the flavorful mixture.
  3. Layer potato slices: Carefully layer the seasoned potato slices into each muffin cup, stacking them up to the top. The layers will shrink slightly during baking, so pack them well to create a tall stack.
  4. Bake the stacks: Place the muffin tin in the preheated oven and bake for 45 to 55 minutes. Bake until the edges of the potato stacks turn golden brown and the centers are tender when pierced with a fork.
  5. Rest and garnish: Remove the muffin tin from the oven and let the potato stacks rest for 5 minutes to firm up. Carefully remove each stack from the muffin tin. Optionally, garnish with extra Parmesan cheese, fresh or dried thyme, or a sprinkle of salt for enhanced flavor before serving.

Notes

  • Use very thin potato slices for even cooking and crispy edges.
  • Yukon Gold potatoes can be used as a creamier alternative to russet potatoes.
  • Half butter and half olive oil helps reduce saturated fat while maintaining flavor.
  • If you prefer, add fresh herbs like rosemary or parsley for different flavor variations.
  • Ensure muffin tins are well greased to prevent sticking.
  • The stacks can be made a few hours ahead and reheated gently before serving.
