Pasta

  • 30 g Parmesan (approx. ¼ cup, grated)
  • 2 tbsp Lemon Juice
  • 50 g Olive Oil (approx. ¼ cup)
  • 80 g Fresh Basil (about 2 cups packed)
  • Salt to taste


Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the linguine according to the package instructions until al dente, usually 7-10 minutes.
  2. Prepare the pesto: While the pasta is cooking, combine sunflower seeds, fresh basil, garlic cloves, grated Parmesan, olive oil, lemon juice, and salt in a food processor. Blend until smooth, adding small amounts of water or more olive oil to achieve a silky, spreadable consistency.
  3. Drain pasta: Once cooked, drain the pasta, reserving about 1 cup of the pasta cooking water to adjust the sauce.
  4. Toss pasta with pesto: Return pasta to the pot or a large bowl and add the prepared pesto. Mix well, adding a splash of reserved pasta water as needed to create a smooth, silky sauce that evenly coats the pasta. Optionally incorporate cooked vegetables or protein at this point.
  5. Serve: Plate the pasta immediately, garnishing with extra grated Parmesan or fresh herbs if desired for added flavor and presentation.
