Ingredients

Chocolate Coating

  • 10 ounces quality dark chocolate (vegan-friendly)
  • 1 ½ tablespoons coconut oil

Filling

  • ⅓ cup creamy peanut butter
  • 3 tablespoons jam or jelly


Instructions

  1. Prepare Muffin Pan: Line a 12-cup muffin pan with 9 liners and set it aside to use later.
  2. Melt Chocolate: Place the chocolate (chips or chopped if using a bar) into a microwave-safe bowl. Microwave at 50% power in 30-second intervals, stirring after each, until the chocolate is nearly melted. Stir in the coconut oil and continue microwaving until the chocolate is fully melted and smooth. Alternatively, melt the chocolate and coconut oil on very low heat on the stovetop, stirring continuously.
  3. Form Chocolate Cups: Spoon about 1 tablespoon of the melted chocolate into each prepared liner. Use the back of the spoon to brush the chocolate up the sides of the liners, creating a shell. Repeat for all nine liners before moving on.
  4. Add Filling: Place approximately ½ tablespoon of creamy peanut butter into the chocolate shell of each cup, followed by 1 teaspoon of your favorite jam or jelly on top of the peanut butter.
  5. Seal Cups: Cover the peanut butter and jam with another tablespoon of melted chocolate, using the back of the spoon to spread and fully coat the filling inside the chocolate shell.
  6. Chill to Set: Place the muffin pan in the refrigerator and allow the cups to set for about 15 minutes, or until the chocolate hardens completely.
  7. Serve and Enjoy: Once set, remove the cups from the liners and enjoy these delicious peanut butter and jelly chocolate treats.
