Ingredients
Dry Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup firmly packed light brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Wet Ingredients
- 5 tablespoons unsalted butter, melted and slightly cooled
- 1/2 cup peanut butter
- 3/4 cup milk
- 2 tablespoons sour cream
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
Topping
- About 2 tablespoons fruit jelly, preserves, or jam (such as strawberry, grape, or raspberry)
- Coarse sugar (optional)
Instructions
- Preheat and Prepare: Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners to prevent sticking and for easy cleanup.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, and salt until evenly combined. Create a well in the center of the mixture for the wet ingredients.
- Combine Wet Ingredients: In a separate bowl, stir together the melted and slightly cooled butter, peanut butter, milk, sour cream, lightly beaten eggs, and vanilla extract until smooth and uniform.
- Create Batter: Pour the wet ingredient mixture into the well of the dry ingredients. Stir gently and just until combined, leaving a few small streaks of flour to avoid overmixing, which helps keep the muffins tender.
- Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full to allow room for rising.
- Add Jelly Swirl: Spoon about 1/4 to 1/2 teaspoon of your chosen jelly on top of each muffin. Use a thin knife to gently swirl the jelly into the batter for a marbled effect without mixing completely.
- Optional Topping: If desired, sprinkle a pinch of coarse sugar on top of each muffin for extra crunch and sweetness.
- Bake: Bake the muffins in the preheated oven for 14 to 18 minutes, or until they turn golden brown and a toothpick inserted into the center comes out clean.
- Cool: Allow the muffins to cool in the pan on a wire rack for 10 minutes, then transfer them from the pan to the wire rack to cool completely, preserving their texture.
Notes
- Do not overmix the batter; some lumps are okay to keep muffins tender.
- Use a mild peanut butter for the best flavor balance.
- Feel free to experiment with different jelly flavors to customize your muffins.
- Coarse sugar topping adds a lovely crunch but is optional.
- These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days or frozen for up to 2 months.
