Pecan Topping and Filling

  • 2 cups pecan halves or lightly chopped pecans (divided: 1 ½ cups and ½ cup)
  • 1 cup packed light or dark brown sugar (200 grams)
  • 1 ½ cups boiling water (360 ml)


Instructions

  1. Preheat Oven: Preheat the oven to 350°F (177°C) to ensure it is at the correct temperature when the cobbler is ready to bake.
  2. Prepare Batter: In a large mixing bowl, combine flour, granulated sugar, baking powder, cinnamon, and salt. Add the milk and vanilla extract; mix just until combined to avoid overmixing and keep the batter tender. Set aside.
  3. Layer Butter and Pecans: Pour the melted butter into the bottom of a 9×13-inch baking dish. Evenly sprinkle 1 ½ cups of pecan halves or chopped pecans over the butter layer.
  4. Add Batter Layer: Carefully pour the prepared batter on top of the butter and pecans without stirring, gently spreading it to create an even layer.
  5. Top with Sugar and Pecans: Evenly sprinkle the brown sugar over the batter, then distribute the remaining ½ cup of pecans on top.
