Ingredients
Berry Puree
- 13 oz Raspberries or Strawberries (Frozen is fine)
- 1/2 cup Sugar
Mousse
- 1 cup Whole or Whipping Cream

- Prepare the Berry Puree: Slice the strawberries or raspberries if using fresh. In a blender or food processor, combine the sliced berries with the sugar and puree until smooth to create the berry base.
- Beat the Cream with Puree: Remove ½ cup of the berry puree and set it aside. In a chilled bowl, beat the whole or whipping cream together with the reserved berry puree until stiff peaks form, creating a light and fluffy mousse.
- Fold in Remaining Puree: Gently fold the remaining berry puree into the whipped cream mixture, taking care not to deflate the mousse. This step integrates the fresh berry flavor throughout the mousse.
- Chill and Serve: Divide the mousse evenly among serving glasses. Refrigerate for at least an hour, or overnight for best results. Before serving, optionally garnish with fresh sliced strawberries or raspberries for an elegant finishing touch.
