Instructions

  1. Grind Pistachios: Place the pistachios in a food processor and grind them until a fine meal forms, ensuring there are no large chunks left.
  2. Add Wet Ingredients and Spices: Add honey, coconut sugar, vanilla extract, five spice powder, salt, and coconut butter to the ground pistachios in the processor. Blend again until the mixture is well combined and slightly sticky.
  3. Mix with Coconut and Water: Transfer the mixture to a mixing bowl. Add the desiccated coconut and water, then stir by hand until everything is evenly incorporated.
  4. Form Macaroons: Use a small ice cream scoop or spoon to shape the mixture into rounded macaroons, pressing slightly to hold their shape.
  5. Dehydrate: Place the formed macaroons in a dehydrator set at 115°F (46°C) and dry for approximately 6 hours. This will create macaroons that are chewy on the outside and soft inside.
  6. Optional Chocolate Dip: Gently melt your preferred chocolate bar and dip the base of each macaroon into the chocolate. Allow the chocolate to set before serving.
