Ingredients
Dry Ingredients
- 1 cup fine blanched almond flour
- 2 scoops (about 1/2 cup) vanilla protein powder
- Pinch of kosher salt
Wet Ingredients
- 3 tablespoons maple syrup
- 2-4 tablespoons milk (soy milk used)
- 1 teaspoon vanilla extract
Add-ins
- 3/4 cup mini chocolate chips (Lily’s brand used)
Instructions
- Mix Ingredients: Add all ingredients except the chocolate chips to a mixing bowl and mix well. Start with 2 tablespoons of milk and add one more tablespoon at a time if the mixture appears too dry. The consistency may vary depending on the protein powder used. Fold in the mini chocolate chips gently after the dough is well combined.
- Form Dough Balls: Roll the dough into even-sized balls using a small ice cream scoop or a rounded tablespoon. If the mixture is sticky, wet your hands slightly to make rolling easier and prevent sticking.
- Chill the Bites: Place the rolled cookie dough balls onto a plate or baking sheet. Chill them in the refrigerator for at least 30 minutes to set and firm up.
