Description

Delicious and nutritious Protein Cookie Dough Bites packed with almond flour, vanilla protein powder, and mini chocolate chips. These no-bake bites are easy to make, perfect for a quick snack or a healthy dessert that satisfies sweet cravings while providing a boost of protein.


Ingredients

Dry Ingredients

  • 1 cup fine blanched almond flour
  • 2 scoops (about 1/2 cup) vanilla protein powder
  • Pinch of kosher salt

Wet Ingredients

  • 3 tablespoons maple syrup
  • 2-4 tablespoons milk (soy milk used)
  • 1 teaspoon vanilla extract

Add-ins

  • 3/4 cup mini chocolate chips (Lily’s brand used)


Instructions

  1. Mix Ingredients: Add all ingredients except the chocolate chips to a mixing bowl and mix well. Start with 2 tablespoons of milk and add one more tablespoon at a time if the mixture appears too dry. The consistency may vary depending on the protein powder used. Fold in the mini chocolate chips gently after the dough is well combined.
  2. Form Dough Balls: Roll the dough into even-sized balls using a small ice cream scoop or a rounded tablespoon. If the mixture is sticky, wet your hands slightly to make rolling easier and prevent sticking.
  3. Chill the Bites: Place the rolled cookie dough balls onto a plate or baking sheet. Chill them in the refrigerator for at least 30 minutes to set and firm up.
  4. Serve: Enjoy the cookie dough bites cold from the fridge or at room temperature as a tasty and protein-packed snack.
