These Protein McGriddle Muffins are a savory and sweet breakfast treat combining ground sausage, sharp cheddar cheese, and a touch of maple syrup folded into a fluffy Kodiak Buttermilk Power Cakes batter. Ingredients

Sausage Mixture

  • ½ lb ground breakfast sausage (not in casing)
  • 3 Tbsp maple syrup

Batter

  • 1 ¼ cups Kodiak Buttermilk Power Cakes mix (spooned and leveled)
  • 5 large eggs
  • 1 ½ cups shredded sharp cheddar cheese
  • ⅓ cup milk


Instructions

  1. Prepare Oven and Pan: Position the oven rack in the middle and preheat the oven to 350°F. Line a muffin pan with paper liners or grease it lightly and set aside.
  2. Cook Sausage: Heat a skillet over medium heat. Add the ground breakfast sausage and cook, breaking it apart with a spatula until it is no longer pink and slightly browned and caramelized. Remove from heat and stir in maple syrup thoroughly.
  3. Cool Sausage: Transfer the cooked sausage mixture to a large mixing bowl and allow it to cool to room temperature, approximately 5 minutes.
  4. Combine Batter: Once the sausage mixture has cooled, add the Kodiak Buttermilk Power Cakes mix, eggs, shredded sharp cheddar cheese, and milk to the bowl. Stir gently to combine all ingredients into a uniform batter.
  5. Fill Muffin Pan: Spoon the batter evenly into the prepared muffin pan using approximately a 3-tablespoon cookie scoop or a spoon. Fill each muffin cup evenly without spilling.
  6. Bake Muffins: Place the muffin pan in the preheated oven and bake for 20 to 25 minutes or until the tops of the muffins are set and lightly golden brown.
