Description

Pull Apart Olive Bread is a savory and visually appealing bread perfect for sharing. It features soft dinner rolls baked with a flavorful mix of Kalamata and green olives, sun-dried tomatoes, feta cheese, and oregano, all drizzled with olive oil for a rich Mediterranean taste. This easy-to-make loaf is perfect as an appetizer, side dish, or snack.

Ingredients

For the Bread and Filling

  • Non-stick cooking spray, as needed for greasing
  • 12 unbaked, thawed dinner rolls
  • 1/4 cup sliced Kalamata olives
  • 1/4 cup green olives, sliced
  • 1/4 cup sun-dried tomatoes, chopped

Topping and Seasoning

  • 1/4 cup crumbled feta cheese
  • 2 teaspoons dried oregano
  • 2 tablespoons olive oil

Instructions

  1. Grease: Spray a loaf pan with non-stick cooking spray to prevent the rolls from sticking during baking.
  2. Arrange Rolls: Place the 12 unbaked, thawed dinner rolls evenly into the loaf pan, arranging them side by side.
  3. Add Olives and Tomatoes: Nestle the sliced Kalamata olives, green olives, and chopped sun-dried tomatoes among and on top of the rolls, distributing them evenly for flavor in every bite.
  4. Rise: Cover the loaf pan (commonly with plastic wrap) and allow the rolls to rise for 3 to 4 hours, or until the dough has expanded about 1 inch above the loaf pan rim.
  5. Remove Cover: Carefully remove the plastic wrap or cover from the risen rolls.
  6. Add Toppings: Evenly sprinkle the crumbled feta cheese over the top of the rolls, followed by the dried oregano for aromatic seasoning.
  7. Drizzle Oil: Drizzle 2 tablespoons of olive oil evenly over the entire loaf to enhance moisture and flavor during baking.
  8. Bake: Place the loaf pan in a preheated oven at 350°F (175°C) and bake for 20 to 25 minutes, or until the bread is golden brown and cooked throughout.
  9. Cool: Remove the bread from the oven, allow it to cool slightly to set, and then serve warm for the best taste experience.

Notes

  • Allowing the dough to rise fully is crucial to achieve a soft, fluffy texture.
  • Use good-quality olives and sun-dried tomatoes for the best flavor.
  • The bread can be served warm or at room temperature.
  • Store leftovers in an airtight container to keep the bread soft.
  • Feel free to add fresh herbs like rosemary or thyme for additional aroma.
