Sauce Ingredients

Instructions

  1. Preheat Oven and Prepare Dish: Preheat the oven to 375ºF and spray a casserole dish with olive oil to ensure the casserole doesn’t stick.
  2. Arrange Main Ingredients: Place the uncooked quinoa, diced onion, and chopped broccoli florets evenly at the bottom of the prepared casserole dish and set aside.
  3. Sauté Garlic and Heat Liquid: Heat a saucepan over medium-high heat, add olive oil and minced garlic. Once the garlic becomes fragrant, pour in the milk, vegetable broth, and sea salt, gently whisking until the liquid is heated but not boiling.
  4. Add Cheese to Sauce: Remove the saucepan from heat and gradually whisk in 6 oz. of freshly grated sharp white cheddar cheese until it fully melts and creates a smooth, creamy sauce.
  5. Combine Sauce and Casserole Ingredients: Pour the cheese sauce over the quinoa, onion, and broccoli mixture in the casserole dish. Stir gently to combine the ingredients evenly.
  6. Initial Bake: Cover the casserole dish and bake it in the preheated oven for 30 minutes, allowing the quinoa to cook and absorb the flavors.
  7. Stir and Continue Baking: Remove the casserole from the oven, stir the mixture to redistribute ingredients, then bake uncovered for an additional 20 minutes to firm up the casserole.
