Description

Delight in these easy and refreshing Raspberry No Bake Cheesecake Bites, perfect for a make-ahead dessert. Creamy, sweetened cream cheese is combined with fresh raspberries and whipped topping, then coated in graham cracker crumbs and frozen to create bite-sized treats that melt in your mouth. Ideal for berry lovers looking for a quick and crowd-pleasing dessert without any baking.

Ingredients

Cheesecake Mixture

  • 16 ounces cream cheese, softened
  • 1/3 cup granulated sugar
  • 12 ounces fresh raspberries
  • 8 ounces whipped topping

Coating

  • 1 & 1/2 cups graham cracker crumbs

Instructions

  1. Whip Cream Cheese and Sugar: Place the softened cream cheese and granulated sugar into a large mixing bowl. Using an electric hand mixer on medium speed, whip the mixture until smooth and creamy.
  2. Fold in Raspberries: Gently add the fresh raspberries to the whipped cream cheese mixture and stir carefully to combine without breaking up the berries too much.
  3. Add Whipped Topping: Fold the whipped topping into the mixture using a spatula until evenly combined. Cover the bowl with plastic wrap and place it in the freezer for 2 hours to firm up the no-bake cheesecake filling.
  4. Prepare Graham Cracker Crumbs: Using a food processor, pulse the graham crackers into fine crumbs. If you prefer, pre-made graham cracker crumbs can be used. Transfer the crumbs to a small bowl.
  5. Shape Cheesecake Bites: Line a sheet tray with parchment or wax paper. Using a 1 to 1.5 tablespoon cookie scoop, portion out dollops of the cheesecake mixture. Roll each bite in graham cracker crumbs to coat completely. If the mixture gets too soft to handle, return it to the freezer briefly to firm up again.
  6. Freeze the Bites: Place the coated cheesecake bites onto the lined sheet tray. Repeat the process until all the mixture is used. Freeze the tray for several hours or until the bites are fully frozen.
  7. Serve: When ready to serve, remove the cheesecake bites from the freezer and let them sit for about 5 minutes at room temperature to soften slightly for the best texture.

Notes

  • This recipe makes about 15 servings but can be doubled or halved to feed more or fewer people.
  • These cheesecake bites are excellent for make-ahead dessert options since they must be kept frozen to maintain their shape.
  • Feel free to substitute raspberries with any other berry or fruit flavors you prefer.
  • Handle the mixture gently when folding in berries to avoid breaking them apart too much.
