Filling

Instructions

  1. Melt White Chocolate and Cream: In a microwave-safe bowl, combine the white chocolate chips and heavy cream. Heat in 15-second increments, stirring well between each until smooth and fully melted.
  2. Add Raspberry Powder: Stir in the raspberry powder thoroughly into the melted white chocolate mixture until evenly incorporated.
  3. Chill Filling: Place the bowl in the refrigerator for 10 to 15 minutes. Chill until the mixture is firm enough to handle but not completely hard.
  4. Shape Truffles: Using a small cookie scoop, portion out the filling. With clean hands, roll each portion into a smooth, round ball.
  5. Prepare Baking Sheet: Line a baking sheet with parchment paper and place the rolled truffles on it.
  6. Melt Dark Chocolate: In a separate medium-sized bowl, microwave the dark chocolate chips in 15-second intervals, stirring between each until fully melted and smooth.
  7. Coat Truffles: Using a fork, dip each truffle into the melted dark chocolate. Roll to coat completely, allowing excess chocolate to drip off. Scrape the bottom of the fork on the bowl edge to remove excess chocolate before placing the truffle back on the parchment paper.
  8. Chill Coated Truffles: Refrigerate the coated truffles for about 10 minutes or until the chocolate has fully set.
