Description

These delightful Rice Krispie Nests are a festive and fun treat perfect for any celebration. Crispy Rice Krispies cereal is mixed with melted mini marshmallows and butter to form nest-shaped cups in a muffin tin. The nests are then topped with colorful dyed coconut shreds, creamy Cadbury spread, and mini Cadbury eggs for a sweet and crunchy finish that’s sure to delight kids and adults alike.

Ingredients

Base Ingredients

  • 4 tablespoons unsalted butter (half a stick)
  • ⅛ teaspoon salt
  • 4 cups mini marshmallows (about ¾ of a 10 ounce bag)
  • 1 teaspoon pure vanilla extract
  • 5 cups Rice Krispies cereal

Toppings

  • 1 ½ cups thin coconut shreds
  • 2-3 gel food colors (your choice of colors)
  • 1 cup Cadbury spread (see notes for alternatives)
  • 54 mini Cadbury eggs (about 1 ¼ cups)

Instructions

  1. Prepare muffin tins: Lightly grease two 12-cup muffin tins and set them aside to prevent sticking.
  2. Melt butter and salt: In a large pot over low heat, melt 4 tablespoons of unsalted butter and stir in ⅛ teaspoon of salt.
  3. Add marshmallows: Add 4 cups mini marshmallows to the pot, stirring continuously until completely melted and smooth.
  4. Add vanilla extract: Remove the pot from heat and stir in 1 teaspoon of pure vanilla extract for flavor.
  5. Mix in cereal: Pour in 5 cups Rice Krispies cereal and gently fold the mixture until the cereal is evenly coated with the marshmallow blend.
  6. Form nests: Scoop 3-4 tablespoons of the mixture into each muffin tin cavity. Press down with a spoon, tamper, or fingers to shape into nests, creating a small depression in the center for filling.
  7. Let nests set: Allow the nests to set at room temperature for 30 minutes until firm enough to handle.
  8. Color the coconut: While the nests set, divide 1 ½ cups shredded coconut into 1 or 2 zip-top bags depending on your desired number of colors. Add 1-3 drops of gel food coloring to each bag, then seal and massage until the coconut is evenly colored. Set aside.
  9. Add fillings: Once nests have set, spoon a generous amount of 1 cup Cadbury spread into each nest depression.
  10. Top with coconut and eggs: Sprinkle the colored shredded coconut over the filling, then top each nest with 3 mini Cadbury eggs.
  11. Remove from trays: Use a butter knife or skewer to carefully loosen and remove each nest from the muffin tins. Serve and enjoy!

Notes

  • You can substitute the Cadbury spread with Nutella, chocolate hazelnut spread, or any other creamy chocolate spread to suit your taste.
  • If you don’t have mini marshmallows, use regular marshmallows chopped into smaller pieces.
  • To avoid coconut coloring bleeding, use gel food colors for vibrant and lasting colors.
  • Storage: Store nests in an airtight container at room temperature for up to 2 days for best texture.
