Ingredients
Ripe Tomatoes:
- 4 medium ripe tomatoes – peeled, seeded, and diced
Tomato Juice:
- 4 cups tomato juice
Fresh Basil:
- 14 leaves fresh basil
Heavy Whipping Cream:
- 1 cup heavy whipping cream
Butter:
- ½ cup butter
Salt and Pepper:

Instructions
- Gather all ingredients. Prepare the tomatoes, juice, basil, cream, butter, salt, and pepper.
- Cook the tomatoes. In a stockpot over medium heat, simmer the tomatoes and juice for about 30 minutes until softened.
- Add basil. Remove from heat and add basil leaves to the pot.
- Purée the soup. Use an immersion blender to blend the soup until smooth.
- Finish the soup. Stir in the cream and butter, heating gently until the butter melts. Season with salt and pepper.
- Serve. Ladle the hot soup into bowls and serve immediately. Enjoy!
