Ingredients

Ripe Tomatoes:

  • 4 medium ripe tomatoes – peeled, seeded, and diced

Tomato Juice:

  • 4 cups tomato juice

Fresh Basil:

  • 14 leaves fresh basil

Heavy Whipping Cream:

  • 1 cup heavy whipping cream

Butter:

  • ½ cup butter

Salt and Pepper:

  • to taste

Instructions

  1. Gather all ingredients. Prepare the tomatoes, juice, basil, cream, butter, salt, and pepper.
  2. Cook the tomatoes. In a stockpot over medium heat, simmer the tomatoes and juice for about 30 minutes until softened.
  3. Add basil. Remove from heat and add basil leaves to the pot.
  4. Purée the soup. Use an immersion blender to blend the soup until smooth.
  5. Finish the soup. Stir in the cream and butter, heating gently until the butter melts. Season with salt and pepper.
