- 1 whole garlic bulb
- 1 tablespoon olive oil

Instructions
- Prepare the garlic and carrots: Preheat your oven to 400°F (200°C). Slice the top off the garlic bulb to expose the cloves, drizzle with olive oil, wrap in foil, and roast in the oven for about 30 minutes until soft and aromatic. At the same time, toss the chopped carrots in olive oil, salt, and pepper, then spread them on a baking sheet and roast for about 20-25 minutes until tender and caramelized.
- Blend the dip: Once the garlic and carrots have cooled slightly, squeeze the roasted garlic cloves out of their skins into a food processor. Add the roasted carrots, tahini, lemon juice, cumin, and a pinch of salt and pepper. Blend until smooth, adding water a tablespoon at a time to reach your desired creamy consistency.
- Adjust the seasoning: Taste the dip and add more salt, lemon juice, or cumin if needed to balance the flavors according to your preference.
- Serve: Transfer the dip to a serving bowl, drizzle with extra olive oil, and garnish with fresh parsley or coriander if desired. Serve with fresh vegetables, pita bread, or crackers.
