Description
This recipe for Roasted Peaches highlights the natural sweetness and juiciness of fresh peaches, enhanced by lemon juice and sugar, then slow-roasted to develop a luscious syrup and tender texture. Perfect for using fresh or thawed frozen peaches, this simple yet elegant dish can be enjoyed on its own or as a topping for desserts, yogurt, or breakfast dishes.
Ingredients
Peach Ingredients
- 2 pounds (900 grams) fresh peaches, cut into 1-inch chunks
- 2 tablespoons fresh-squeezed lemon juice
- 1 cup (200 grams) granulated sugar, divided
Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit (204 degrees Celsius) and line a half baking sheet with parchment paper to prepare for roasting.
- Prepare Peaches: Leave the skin on fresh peaches for natural pectin that enhances syrup thickness and color. If using frozen peaches, thaw completely before proceeding.
- Mix Ingredients: Place the chopped peaches in a large bowl. Add lemon juice and 1/2 cup of sugar, stirring well to combine evenly.
- First Roast: Spread the peach mixture in a single layer on the lined baking sheet and roast for 15 minutes, allowing fruit to soften and syrup to start forming.
- Adjust Sweetness and Continue Roasting: Stir peaches and taste. If more sweetness is desired, add 1/4 cup sugar and roast for another 10 minutes. Stir and taste again; add remaining 1/4 cup sugar if preferred and continue roasting for 10-15 minutes until peaches are slightly softened and syrup is thick and bubbling.
- Cool and Store: Remove from oven and scrape peaches and syrup into a bowl to cool to room temperature. Store in refrigerator up to 2 weeks, or freeze for up to 6 months for longer preservation.
Notes
- Keeping peach skins on is recommended for better syrup texture and color.
- If fresh peaches are not in season, frozen peaches can be thawed and substituted.
- Adjust sugar amounts according to your taste preferences and peach sweetness.
- Store roasted peaches in a sealed container to maintain freshness.
- Roasted peaches make a great topping for ice cream, pancakes, yogurt, or salads.
