  • 2 tablespoons fresh-squeezed lemon juice
  • 1 cup (200 grams) granulated sugar, divided


Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit (204 degrees Celsius) and line a half baking sheet with parchment paper to prepare for roasting.
  2. Prepare Peaches: Leave the skin on fresh peaches for natural pectin that enhances syrup thickness and color. If using frozen peaches, thaw completely before proceeding.
  3. Mix Ingredients: Place the chopped peaches in a large bowl. Add lemon juice and 1/2 cup of sugar, stirring well to combine evenly.
  4. First Roast: Spread the peach mixture in a single layer on the lined baking sheet and roast for 15 minutes, allowing fruit to soften and syrup to start forming.
  5. Adjust Sweetness and Continue Roasting: Stir peaches and taste. If more sweetness is desired, add 1/4 cup sugar and roast for another 10 minutes. Stir and taste again; add remaining 1/4 cup sugar if preferred and continue roasting for 10-15 minutes until peaches are slightly softened and syrup is thick and bubbling.
  6. Cool and Store: Remove from oven and scrape peaches and syrup into a bowl to cool to room temperature. Store in refrigerator up to 2 weeks, or freeze for up to 6 months for longer preservation.
