Instructions

  1. Prepare Vegetables: Mince the carrot, onion, and celery finely. You may use a food processor for quicker and more uniform chopping.
  2. Cook Ground Meat: Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the ground turkey or beef and break it up with a spatula as it cooks. Sauté for 5-7 minutes until the meat is no longer pink and fully cooked through. Drain any excess liquid from the pan before proceeding.
  3. Sauté Vegetables: Add the remaining 1 tablespoon olive oil, minced onion, carrot, celery, and garlic to the pan with the cooked meat. Stir regularly and cook for about 2-3 minutes until the vegetables become softened and fragrant.
  4. Prepare Sauce: In a blender, combine the San Marzano tomatoes, tomato paste, and kosher salt. Blend on high until the mixture is smooth. Pour the blended tomato sauce into the pan along with the chicken broth. Stir well, then reduce the heat to low. Let the sauce simmer gently for 25 to 40 minutes, stirring frequently to prevent burning and encourage flavor development.
  5. Cook Pasta: While the sauce simmers and nears completion, bring a large pot of salted water to a boil. Cook the rotini pasta according to the package instructions until al dente. Drain the pasta once cooked.
