Description

This hearty Sausage, Cabbage & Sweet Potato Stew is a comforting and flavorful dish perfect for any season. Made with uncured nitrate/nitrite-free polish beef sausage, purple cabbage, and sweet potatoes, it comes together quickly using your choice of Instant Pot, slow cooker, or stovetop. It offers a balanced blend of savory sausage and sweet, tender vegetables, finished with a splash of apple cider vinegar for a tangy brightness.


Ingredients

Main Ingredients

  • 1 medium yellow onion, thinly sliced
  • 6 cups thinly sliced purple cabbage
  • 2 cups chopped sweet potato, skin on
  • 2 pounds uncured nitrate/nitrite-free polish beef sausage, chopped
  • 1 teaspoon kosher salt
  • 1 quart chicken stock
  • 1 tablespoon apple cider vinegar

Optional Garnish

  • 2 tablespoons thinly sliced green onion


Instructions

  1. Prepare Ingredients: Thinly slice the yellow onion and purple cabbage. Peel and chop the sweet potatoes into bite-sized pieces. Chop the polish sausage into chunks.
  2. Add to Cooking Vessel: Depending on your method, place the onion, cabbage, sweet potato, chopped sausage, kosher salt, and chicken stock into your Instant Pot, slow cooker, or Dutch oven.
  3. Instant Pot Cooking: Seal the 6-quart pressure cooker lid and set it to manual high pressure for 5 minutes. Once the cooking time is complete, perform a quick pressure release to avoid overcooking.
  4. Slow Cooker Cooking: Cover and cook on high for 4-5 hours or on low for 6-8 hours, until the sweet potatoes are tender and the flavors are well blended.
  5. Stovetop Cooking: Place the pot over medium-high heat and bring to a boil. Then reduce heat to low, cover, and simmer gently for 25-35 minutes, or until vegetables are tender.
  6. Finish and Serve: Uncover the pot and stir in the apple cider vinegar. Taste the stew and add additional salt if needed. Garnish with thinly sliced green onion if desired for freshness and color.

  • Teton Water Ranch Polish Sausage was used for the original recipe for its quality and flavor.
  • Precooked chicken sausage can be substituted; the stew will have a lighter flavor but remain delicious.
  • Look for smaller heads of purple cabbage or ask your grocer to halve a large head to prevent waste.
  • Russet potatoes are a suitable alternative to sweet potatoes if preferred.
