Ingredients
Wet Ingredients
- 2 large Eggs
- 30 ml (2 tablespoons) Olive Oil
- 125 ml (1/2 cup) Full Cream / Whole Milk
- 125 gr (1/2 cup) Sour Cream
Dry Ingredients
- 225 gr (1 1/2 cup) Self-Rising Flour
- 1 teaspoon Salt
- Optional: your choice of Spices
Cheese
- 50 gr (1 cup) Grated Cheddar Cheese (or your preferred type of grated cheese)
Instructions
- Grate the Cheese: Finely grate the cheddar cheese or your preferred cheese and set it aside to be added later into the batter.
- Combine Wet Ingredients: In a large mixing bowl, whisk together the eggs, olive oil, milk, and sour cream until the mixture is smooth and fully blended.
- Add Dry Ingredients: Sift in the self-rising flour and salt into the wet mixture. Whisk thoroughly until the batter is smooth and free of lumps. At this stage, you can also add any optional spices you prefer with the dry ingredients.
- Incorporate Cheese: Fold the grated cheese gently into the batter ensuring it is evenly distributed to prevent any cheese pockets.
- Cook the Pancakes: Heat a large saucepan, crepe pan, skillet or non-stick pan over medium-high heat. Lightly grease it with oil or butter. Pour a portion of the batter onto the hot pan and cook for about 2 minutes until bubbles form on the surface. Flip the pancake and cook the other side for approximately 2 minutes or until golden brown.
- Serve: Repeat the cooking process with remaining batter. Serve pancakes hot topped with your favorite toppings of choice and enjoy immediately.
Notes
- You can add spices like black pepper, paprika, or herbs to the batter to customize the flavor.
- Use a non-stick pan or well-seasoned skillet to prevent sticking.
- Adjust the heat if pancakes are browning too fast or cooking too slowly.
- These pancakes are best enjoyed fresh while still warm.
- You can substitute cheddar with any favorite grated cheese for different flavors.
