Ingredients
Dry Ingredients
- 3-1/2 cups old-fashioned oats
- 1/2 cup almonds
- 1/2 cup pumpkin seeds
- 2 tablespoons sesame seeds
- 1 teaspoon garlic powder
- 2 teaspoons Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon salt
Wet Ingredients
- 1/3 cup coconut oil, melted
- 2 tablespoons Worcestershire sauce
- 1/4 cup cashew butter
- 1/4 cup grated parmesan cheese
- 1/2 cup chickpeas
- 2 egg whites
Instructions
- Preheat Oven and Prepare Dry Mix: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, combine the oats, almonds, pumpkin seeds, sesame seeds, garlic powder, Italian seasoning, paprika, and salt.
- Blend Wet Ingredients: In a food processor or a chopper cup with an immersion blender, blend the melted coconut oil, Worcestershire sauce, cashew butter, grated parmesan cheese, and chickpeas until smooth and creamy.
- Combine Wet and Dry Ingredients: Pour the blended wet mixture over the dry ingredients. Add the egg whites and stir thoroughly to ensure all the dry ingredients are evenly coated with the wet mixture.
- Spread and Bake: Spread the mixture evenly on the prepared baking sheet, pressing it down firmly with a sturdy spatula to create an even layer. Bake for 22 to 25 minutes, or until the granola turns golden brown and crispy.
- Cool and Serve: Remove the granola from the oven and allow it to cool completely on the baking sheet. Once cooled, break into clusters and enjoy as a savory snack or topping.
Notes
- Pressing the mixture firmly before baking helps form crisp clusters.
- Store granola in an airtight container to maintain freshness and crunch.
- For a vegan version, substitute egg whites with flax eggs or a commercial egg replacer.
- Adjust seasoning to taste, adding more garlic powder or Italian seasoning for extra flavor.
