Instructions

  1. Mix Ingredients: In a saucepan, combine the applesauce, sugar, lime Jell-O mix, and unflavored gelatin. Place over medium to high heat and stir continuously until the mixture comes to a full boil.
  2. Boil: Allow the mixture to boil for one full minute while stirring to fully dissolve the gelatin and sugar, ensuring a smooth gummy base.
  3. Pour and Chill: Remove the saucepan from the heat. Line a 13×9-inch baking dish with parchment paper and pour the hot mixture into it. Place the dish in the refrigerator and chill for at least 2 hours, or until the gummy mixture is fully set.
  4. Prepare for Cutting: Once set, carefully lift the gummy slab out of the pan using the parchment paper. Dust the surface of the gummy layer with granulated sugar to prevent sticking.
  5. Cut Shapes: Using a shamrock cookie cutter, press out shamrock shapes from the gummy slab. After cutting the first shape, dip the cookie cutter in sugar before each subsequent cut to avoid sticking.
