Ingredients
Vegetables & Fruits
- 1 ½ Pounds Fingerling Potatoes (washed and cut into halves or quarters)
- 2 Apples (sliced, preferably Honey Crisp)
Chicken
- 4 Large Bone-in Skin-on Chicken Thighs (pat dry)
Sauce & Seasonings
- 2 Tablespoons Olive Oil
- ¼ Cup Coarse Dijon Mustard
- 2 Tablespoons Honey
- 3 Cloves Garlic (mashed)
- 1 Teaspoon Paprika
- 1 Teaspoon Kosher Salt
- ½ Teaspoon Ground Black Pepper
- 1 ½ Tablespoons Fresh Thyme (stems removed and chopped finely)
Instructions
- Preheat the Oven: Set your oven to 425°F (220°C) to get it ready for roasting the chicken, potatoes, and apples together on a sheet pan.
- Prepare the Potatoes: Wash and cut the fingerling potatoes into halves or quarters. Place them evenly on a baking sheet, drizzle with the olive oil, and season with a pinch of salt and black pepper. Toss well to coat the potatoes evenly.
- Make the Honey Dijon Sauce: In a medium bowl, whisk together coarse Dijon mustard, honey, mashed garlic, paprika, fresh thyme, kosher salt, and ground black pepper until well combined. Set this flavorful mixture aside.
- Prepare Chicken: Pat the bone-in skin-on chicken thighs dry with paper towels to ensure crisp skin. Nestle the chicken pieces among the potatoes on the baking sheet. Generously brush the tops of the chicken thighs with half of the honey Dijon sauce mixture.
- Start Baking: Place the sheet pan in the preheated oven and bake for 30 minutes to start cooking the chicken and potatoes.
- Add Apples and Finish Baking: While the chicken bakes, slice the apples into bite-size pieces. After the initial 30 minutes, remove the baking sheet from the oven and scatter the chopped apples among the potatoes. Brush the chicken, potatoes, and apples with the remaining honey Dijon sauce.
- Continue Baking: Return the sheet pan to the oven and bake for an additional 15 minutes or until the chicken reaches an internal temperature of 165°F (74°C). If the chicken skin browns too fast, loosely cover the sheet pan with foil to prevent burning.
- Serve: Remove the sheet pan from the oven. Gently toss the potatoes and apples to coat them in the pan juices before serving alongside the crispy honey Dijon chicken thighs.
Notes
- Use bone-in skin-on chicken thighs for the best flavor and texture; skin-on ensures crispiness.
- Fingerling potatoes hold their shape well and roast beautifully alongside chicken.
- If apples brown too quickly before adding, choose firm varieties like Honey Crisp for best results.
- If chicken skin is browning too fast, loosely cover the pan with foil to prevent burning.
- Ensure chicken reaches an internal temperature of 165°F for safe consumption.
- This recipe can be easily doubled for larger families or gatherings.
