Description

This Shrimp Fajitas recipe delivers a quick and flavorful Mexican-inspired meal featuring jumbo shrimp marinated in a smoky blend of spices, sautéed with caramelized onions and bell peppers. Served with warm tortillas and fresh toppings like guacamole, sour cream, and salsa, this dish is perfect for a vibrant weeknight dinner that comes together in just 25 minutes.

Ingredients

Seafood and Vegetables

  • 1 ½ pounds jumbo shrimp (peeled and deveined)
  • 1 yellow onion (thinly sliced)
  • 2 bell peppers (thinly sliced)

Seasonings and Oils

  • ¼ cup extra virgin olive oil
  • ½ tablespoon chili powder
  • ½ tablespoon ground cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Additional Ingredients

  • 1 lime
  • 8 tortillas
  • Avocado (or guacamole), sour cream, and salsa (for serving)

Instructions

  1. Make the fajita seasoning: In a small bowl, mix together chili powder, ground cumin, garlic powder, paprika, dried oregano, kosher salt, and ground black pepper until well combined.
  2. Season the shrimp: In a large bowl, toss the peeled and deveined shrimp with two tablespoons of olive oil, the juice from half a lime, and the prepared fajita seasoning. Ensure the shrimp is fully coated, then let it marinate while you prepare the vegetables.
  3. Sauté the onion and bell peppers: Heat the remaining two tablespoons of olive oil in a large skillet over medium heat. Add the thinly sliced onion and bell peppers, cooking for 4 to 5 minutes until softened and the onions begin to caramelize. Transfer the cooked vegetables to a plate.
  4. Sauté the shrimp: In the same skillet, add the marinated shrimp and cook for 2 to 3 minutes on each side until they turn pink and opaque, signaling they are fully cooked.
  5. Combine shrimp and vegetables: Return the sautéed bell peppers and onions to the skillet with the shrimp. Toss everything together well and squeeze juice from the remaining half lime over the mixture to enhance the flavors.
  6. Serve: Serve the shrimp and vegetable mixture immediately with warm tortillas and your choice of toppings such as sour cream, guacamole, and salsa for a delicious shrimp fajita experience.

Notes

  • For a spicier version, add a pinch of cayenne or use chipotle powder in the fajita seasoning.
  • You can substitute the jumbo shrimp with chicken strips if preferred.
  • Warm the tortillas before serving to make them more pliable and enhance flavor.
  • Leftover fajita mixture can be stored in an airtight container in the refrigerator for up to 2 days.
  • Use fresh lime juice for the best flavor impact.
