Ingredients
Dough and Coating
- 1/4 cup all-purpose flour (to dust counter)
- 24 frozen dinner yeast roll dough balls (such as Rhode’s)
- 1/2 cup baking soda
- Pretzel salt, for sprinkling
Filling
- 1 Recipe Sloppy Joe (approx. 1 1/2 tablespoons per bomb)
- 12 ounces mild cheddar cheese, cut into 24 cubes
Egg Wash
- 1 large egg
- 2 tablespoons water
Instructions
- Preheat oven and prepare baking sheets. Set your oven to 450°F and line two baking sheets with silicone mats or parchment paper to prevent sticking and ensure easy cleanup.
- Boil water for baking soda bath. Fill a large 8-quart pot with water and bring it to a boil over medium-high heat. This will be used later for the baking soda dip.
- Defrost the yeast rolls. Sprinkle your clean countertop lightly with flour. Microwave eight frozen yeast roll dough balls at a time on defrost for 2-4 minutes until they are no longer frozen but not cooked. Place the defrosted dough balls on the floured surface and roll them to coat them lightly with flour. Repeat until all dough balls are defrosted.
- Shape dough and add filling. Flatten and stretch one dough ball on the floured board to about 3-4 inches across, creating a mini pizza shape. Use a small rolling pin if desired. Place about 1 1/2 tablespoons of sloppy joe filling in the center and spread slightly. Then add a cube of mild cheddar cheese on top.
- Seal the dough balls. Fold the dough edges over the filling, bringing the top and bottom edges together first, then the sides. Continue pulling up the edges to fully enclose the filling, pushing the filling inside as needed. Pinch the dough tightly to seal it completely. If it won’t seal well, dust your fingertips with flour and crimp the dough edges firmly.
- Arrange dough balls on the baking sheet. Place the sealed dough balls on a prepared baking sheet, spaced apart. Repeat the shaping process until all dough balls are filled and placed.
- Prepare the baking soda bath. Remove the boiling water from heat. Carefully add baking soda into the hot water a little at a time; the mixture will bubble up vigorously, so proceed with caution.
- Dip dough balls in baking soda water. Using a slotted spoon, gently place a few dough balls at a time into the baking soda bath. Let them soak for 30 seconds, then remove and place them back on the baking sheet, ensuring they do not touch each other. Repeat until all dough balls have been dipped.
- Apply egg wash and salt. Beat the egg and water together in a small bowl. Gently brush this egg wash over the surfaces of each dough ball and sprinkle with pretzel salt to complete the pretzel effect.
- Bake the Sloppy Joe Bombs. Place the baking sheets in the oven and bake for 8-10 minutes until the tops turn a nice, pretzel-brown color. Rotate the trays halfway through baking to ensure even cooking.
- Serve and enjoy. Cheese may escape from the bombs during baking—that’s part of the charm. Serve all the cheesy goodness with the bombs, and watch your guests delight in the ooey-gooey deliciousness.
