Description

These Slow Cooker Garlic Butter Steak Bites are melt-in-your-mouth tender, juicy, and bursting with savory garlic butter flavor. Perfect for a no-fuss, fix-it-and-forget-it meal, this recipe uses sirloin steak slow-cooked with onions, garlic, beef stock, and au jus for a hearty dish that’s simple yet delicious. Serve it as a comforting main course over mashed potatoes, noodles, or rice for a satisfying family dinner.

Ingredients

For the Steak Bites

  • 3 pounds sirloin steak, cut into bite-sized pieces
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon vegetable oil (plus more as needed)

For the Slow Cooker

  • 1 small sweet onion, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 1 cup unsalted beef stock
  • 1 ounce packet au jus gravy mix
  • 4 tablespoons unsalted butter, thinly sliced

Instructions

  1. Season the Steak: Place the steak pieces into a large bowl, sprinkle with kosher salt and black pepper, and toss thoroughly to season all sides.
  2. Sear the Steak: Heat a large skillet over medium-high heat, add vegetable oil, and once shimmering hot, sear the steak pieces in batches. Brown them just until they develop color on the outside, not cooking fully. Add more oil if needed between batches.
  3. Layer the Slow Cooker: Transfer all seared steak pieces into a 6-quart slow cooker. Add the thinly sliced sweet onion and garlic, gently stirring to combine and distribute evenly.
  4. Add Liquids and Seasoning: Pour the unsalted beef stock over the steak mixture. Evenly sprinkle the au jus gravy mix all over the top. Lay the sliced butter over everything.
  5. Slow Cook: Cover the slow cooker with its lid. Cook on high for 3-4 hours or on low for 6-8 hours, stirring once an hour if possible to ensure even cooking and flavor.
  6. Serve: Once the steak bites are fork-tender and infused with garlic butter flavor, serve hot. Enjoy over mashed potatoes, egg noodles, or rice for a complete meal.

Notes

  • Searing the steak before slow cooking helps lock in flavor and gives a richer color and taste.
  • You can use other cuts of steak, but sirloin works best for tenderness and flavor in the slow cooker.
  • Leftovers keep well in an airtight container in the refrigerator for up to 3 days.
  • For extra flavor, garnish with chopped parsley or add a splash of Worcestershire sauce before serving.
