These S’mores Brownie Bites are a delightful treat combining rich, fudgy brownie centers with gooey marshmallow filling, coated in melted chocolate and a crunchy graham cracker crumb shell. Perfect for satisfying your sweet tooth with a fun, bite-sized twist on classic s’mores.
Ingredients
Brownie Base
- 1 Box brownie mix (plus the ingredients it calls for)
Coating & Fillings
- 1 Cup graham cracker crumbs
- 1 ¼ Cups mini semi-sweet chocolate chips
- ½ Cup marshmallow fluff or 20 mini marshmallows
- 1 Teaspoon oil (optional, for thinning chocolate)
- Sprinkles (optional, for decoration)
Instructions
- Bake the Brownies: Prepare the brownies according to the instructions on the box, using an 8-inch square pan to ensure a soft interior. Bake and allow them to cool completely.
- Scoop the Brownie Interiors: Once cooled, scoop out portions of the soft brownie from the inside, avoiding the crunchy edges. Place the brownie scoop in your palm and gently squish it together several times until soft and combined like Play-Doh.
- Fill and Shape: Flatten the brownie scoop into a shallow bowl shape with your thumb. Add a small amount of marshmallow fluff or one mini marshmallow in the center. Carefully wrap the brownie edges over the marshmallow and gently roll between your palms to form a closed ball.
- Freeze the Brownie Balls: Repeat the process with all scoops. Arrange the brownie balls on a plate and freeze for 30 minutes.
- Prepare Coating Mixture: Place graham cracker crumbs and optional sprinkles in a shallow dish for rolling later.
- Melt the Chocolate: Microwave the mini chocolate chips in a microwave-safe dish in 20-second intervals until fully melted. Stir well. If the chocolate is thick, stir in about 1 teaspoon of oil to thin it for dipping.
- Dip and Coat: Remove brownie balls from freezer. Using a fork or toothpick, dip each ball into the melted chocolate, allow excess chocolate to drip off, then roll in the graham cracker crumb mixture. Set the coated balls on parchment-lined plate.
- Chill to Set: Refrigerate the coated truffles for 30 minutes or until the chocolate shell hardens and the bites are set.
