Description

This Snickerdoodle Tahini Date Smoothie is a creamy, nutrient-packed beverage that combines the warm flavors of cinnamon and vanilla with the rich, nutty taste of tahini and the natural sweetness of Medjool dates. Featuring frozen cauliflower for a smooth, creamy texture and plant-based almond milk, this smoothie is a unique and delicious way to start your day or enjoy as a wholesome snack.

Ingredients

For the Date Smoothie:

  • 3 pitted large Medjool dates (¼ cup packed)
  • 1 cup unsweetened almond milk (or substitute light coconut milk), plus more to thin if necessary
  • ¾ cup frozen cauliflower
  • 1 tablespoon tahini
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cinnamon

Optional Smoothie Add-ins:

  • 1 tablespoon cacao powder
  • 1 scoop your favorite protein powder
  • 1 tablespoon flaxseed meal
  • ¼ cup gluten free rolled oats

Instructions

  1. Soak the Dates: Soak the pitted Medjool dates in 1 cup of very warm water for at least 5 minutes to soften them, which makes blending easier and results in a smoother texture.
  2. Prepare Ingredients: While the dates are soaking, gather and measure all remaining ingredients including almond milk, frozen cauliflower, tahini, vanilla extract, and cinnamon along with any optional add-ins you wish to include.
  3. Blend Smoothie: Add the soaked dates (drained or with some soaking water if desired), almond milk, frozen cauliflower, tahini, vanilla extract, and cinnamon to a high-powered blender. Add any optional ingredients here as well. Blend until the mixture is completely smooth, adding more almond milk as needed to reach your preferred consistency.
  4. Serve: Pour the smoothie into a glass and enjoy immediately. This recipe yields one serving; feel free to double the ingredients to serve two.

Notes

  • You can substitute any nut butter for tahini, though tahini adds a unique depth of flavor. Peanut butter is a delicious alternative.
  • Adjust the thickness of the smoothie by adding more or less almond milk.
  • For added nutrition and flavor, try the optional add-ins like cacao powder, protein powder, flaxseed meal, or gluten free rolled oats.
  • Medjool dates provide natural sweetness; ensure they are soft enough for easy blending.
