Ingredients

Egg Mixture

  • 8 Eggs
  • 125 ml Milk (½ cup)
  • 120 g All-Purpose Flour (1 cup)
  • ½ tsp Baking Powder

Vegetables and Herbs

  • 100 g Spinach (around 3 cups, fresh)
  • 20 g Parsley or Dill (or a mix, about ¼ cup)

Cheese

  • 150 g Feta (crumbled, ¾ cup)
  • 100 g Cheddar (grated, 1 cup)


Instructions

  1. Preheat the Oven: Preheat your oven to 180°C (350°F) and prepare a 20 x 20 cm (9 x 9 inch) baking dish by lightly greasing it or lining it with parchment paper for easy removal.
  2. Mix Wet Ingredients and Flour: In a large bowl, whisk together the 8 eggs, 125 ml milk, 120 g all-purpose flour, and ½ teaspoon baking powder until the batter is smooth and free of lumps, ensuring an even texture in the bake.
  3. Add Spinach, Herbs, and Cheese: Fold in the 100 g spinach, 20 g parsley or dill, crumbled 150 g feta, and most of the 100 g grated cheddar. Mix thoroughly to distribute all ingredients evenly throughout the batter.
  4. Transfer to Baking Dish: Pour the mixture into the prepared baking dish. Sprinkle the remaining grated cheddar evenly on top and smooth the surface gently with a spatula to create an even layer.
  5. Bake the Egg Casserole: Place the baking dish in the preheated oven and bake for 35 to 40 minutes, or until the top is golden brown and the center is fully set and no longer jiggly when gently shaken.
