Description

These Spinach and Feta Triangles are a delicious and easy-to-make savory pastry featuring a flaky puff pastry filled with a flavorful mixture of spinach and crumbled feta cheese. Perfect as an appetizer, snack, or light meal, they bake to a golden crisp and are enhanced with a sprinkle of sesame seeds for added texture and flavor.

Ingredients

Filling

  • 200 g frozen spinach
  • 50 g feta cheese (Bulgarian feta recommended)
  • Salt and pepper to taste

Pastry

  • 1 puff pastry sheet
  • Olive oil spray (optional)
  • Sesame seeds (for topping)

Instructions

  1. Thaw Puff Pastry and Spinach: Begin by thawing the sheet of puff pastry at room temperature, which usually takes about 10 minutes. Simultaneously, thaw the frozen spinach until soft.
  2. Drain Spinach: Once thawed, place the spinach in a colander and press down to remove all excess water. This step is crucial to avoid soggy pastry.
  3. Prepare Filling: Transfer the drained spinach to a bowl. Crumble the feta cheese into small pieces using your fingers and combine with the spinach. Season the mixture with salt and pepper, then mix thoroughly to blend flavors.
  4. Preheat Oven: Preheat the oven to 180°C (350°F) to ensure it reaches the correct temperature for baking.
  5. Cut Puff Pastry: When the puff pastry has softened slightly, use a sharp knife to cut it into 4 equal squares for making the triangles.
  6. Fill Pastry Squares: Place a portion of the spinach and feta mixture onto the bottom right corner of each puff pastry square, shaping it so that it forms a triangle. Make sure to keep the filling away from the edges to prevent leaking.
  7. Fold and Seal: Fold the pastry over the filling to form a triangle shape. Gently press the edges together with your fingers to seal. Then, transfer the filled triangles onto a baking sheet lined with parchment paper. Use a fork to press down along the edges again for a secure seal.
  8. Optional Topping: Lightly spray the tops of the triangles with olive oil and sprinkle sesame seeds evenly for added flavor and texture.
  9. Bake: Place the baking sheet in the preheated oven and bake the triangles for 15 to 20 minutes until they turn golden brown and puffed up.
  10. Cool and Serve: Remove the triangles from the oven and allow them to cool slightly before serving to enjoy the flaky texture and flavorful filling.

Notes

  • Make sure to thoroughly drain the spinach to avoid soggy pastry.
  • Use a sharp knife for clean cuts on the puff pastry sheet.
  • You can swap Bulgarian feta for any crumbly salty feta if unavailable.
  • These triangles are best enjoyed warm, fresh out of the oven.
  • Store leftovers in an airtight container and reheat in the oven to maintain crispiness.
