Ingredients
Steak
- 2 steaks (1-inch thick, NY strip, ribeye, or sirloin)
- 4 teaspoons steak seasoning
- 2 tablespoons ghee (or 1 tablespoon butter + 1 tablespoon olive oil)
Eggs
- 8 large eggs
- 1 teaspoon steak seasoning (reserved from above)
Garnish
- 1 tablespoon chopped parsley

Instructions
- Season the Steaks: Sprinkle 3 teaspoons of steak seasoning evenly on both sides of each steak, reserving 1 teaspoon for the eggs.
- Heat the Skillet and Sear Steaks: Preheat a 12-14 inch cast-iron or nonstick skillet over medium-high heat on the stovetop. Add 1 tablespoon of ghee and allow it to melt. Place the steaks in the skillet and sear each side for 3-4 minutes to achieve medium rare doneness. Remove steaks from skillet and transfer to a plate. Cover loosely with foil to keep warm.
- Prepare Skillet for Eggs: Use a spatula to scrape off any leftover seasoning bits from the skillet to prevent eggs from sticking. Reduce heat to medium.
- Cook the Eggs: Add the remaining 1 tablespoon of ghee to the skillet. Carefully crack eggs into the skillet, making sure not to overcrowd. Sprinkle the tops with the reserved teaspoon of steak seasoning. Cook eggs for 2 to 3 minutes until the whites are set and yolks remain runny for sunny side up. You may need to cook in batches depending on skillet size. You may also cook eggs your preferred style, such as over easy or scrambled.
- Slice and Serve: Slice rested steaks into ¼ inch strips against the grain for tenderness. Sprinkle both steak strips and eggs with chopped fresh parsley. Serve immediately as a high-protein breakfast or with optional sides like toast, hashbrowns, ranchero or chimichurri sauce.
