Ingredients

Avocado Mixture

  • 1 large avocado
  • 1 tsp fresh squeezed lemon juice

Toast & Toppings

  • 4 slices of Ezekiel bread, toasted
  • 1 cup chopped strawberries
  • 1 Tbsp high quality balsamic vinegar
  • 2 Tbsp toasted pine nuts
  • 1 Tbsp chopped fresh basil or parsley leaves

Eggs

  • 1 tsp butter or ghee
  • 4 large eggs, beaten
  • sea salt and fresh ground pepper, to your taste


Instructions

  1. Melt Butter or Ghee: Melt your butter or ghee in a skillet over medium heat to prepare for cooking the eggs.
  2. Scramble the Eggs: Add the beaten eggs to the skillet and cook, stirring frequently, for about 3-4 minutes or until they reach your preferred level of doneness. Season with sea salt and fresh ground pepper, then remove from heat and set aside.
  3. Mash the Avocado: While the eggs cook, mash the avocado in a bowl with a fork, mixing in 1 teaspoon of fresh squeezed lemon juice to prevent browning and enhance flavor.
