  • 2 medium bananas, mashed

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan thoroughly and set it aside to prepare the batter.
  2. Coat Strawberries with Flour: In a small bowl, toss the quartered strawberries with 2 tablespoons of flour to coat them evenly. This helps prevent the strawberries from sinking to the bottom of the bread during baking. Set aside.
  3. Mix Dry Ingredients: In a large mixing bowl, whisk together 1 1/4 cups all-purpose flour, baking powder, baking soda, and salt until well combined.
  4. Combine Wet Ingredients: In another bowl, beat the egg, granulated sugar, vanilla extract, sour cream, and oil until smooth. Then fold in the mashed bananas until evenly mixed.
  5. Combine Wet and Dry Mixtures: Gradually add the dry ingredients into the wet ingredients, stirring gently until just combined. Avoid overmixing to ensure a tender crumb.
  6. Fold in Strawberries: Gently fold the floured strawberries into the batter, distributing them evenly throughout.
  7. Transfer to Pan and Bake: Pour the batter into the prepared loaf pan. Optionally, arrange a few strawberry pieces on top for decoration. Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
